Selected Quality Fish Maw
Fish maw is actually the air sacs in a fish. The air sacs are dried and fried until golden brown. Fish maw is a Chinese delicacy usually served braised or in soups. It can be stuffed with fillings before cooking. It is recommended to blanch it in hot water before cooking to remove its oily odour.
Recipe for Mushroom Beiqi Braised Fish Maw(供五人份/ 5 servings)
Ingredients
50g fish maw, 80g flower mushrooms, 300g chicken meat, 5g Astragalus Slice (Beiqi), garlic *Quantity of fish maw depends on personal preference
Method:
1. Blanch fish maw in boiling water. Remove and squeeze dry then cut into slices.
2. Saute garlic until fragrant. Add chicken meat, Astragalus Slices, flower mushrooms and condiments to taste. Simmer in low heat for 20 minutes.
3. Add fish maw and simmer for another 10 minutes then ready to serve.
Store in cool and dry place, keep refrigerated after opened.
