Premium quality black fungus (compressed) is harvested in the northeast in autumn. Its popular edible mushroom known for its soft, gelatinous texture and slight crunch. Compared to those harvested in spring, Premium Quality Black Fungus tends to be darker in colour, thicker, firmer in texture, and often considered more nutritious.
